Fat bloom in chocolate and compound coatings

چکیده
The Olmec civilization (1500 BC) was the first to transform the cocoa bean into a form of chocolate. For a long time, the cocoa bean has been used as a foodstuff as well as currency. It also has had both religious and divine aspects. In the eighteen-century, the Europeans found it had some aphrodisiac properties [1]. Although chocolate is no longer reserved for the elite, from a scientific point of view, chocolate still retains some mysteries. For example, bloom in chocolate, perhaps a less poetic notion but just as much exciting, is still somewhat a mystery.

Surface bloom on improperly tempered chocolate
The surface composition, in terms of sugar and fat content, on untempered and overtempered chocolates was estimated by carefully scraping the surface layer and analyzing fat and sugar melting enthalpies by differential scanning calorimetry. The dull surface of over-tempered chocolate had a fat and sugar composition similar to the initial chocolate mass, whereas the surface bloom formed on untem...

Polyglycerol polyricinoleate (PGPR, E-476) is a powerful water-in-oil emulsifier 1–5 used to manufacture stable pan release agents for the bakery industry and to stabilize low fat margarine systems with high water content. However, its main application is in the chocolate and confectionery industry,6,7 since it improves the flow properties of chocolate and vegetable fat coatings by lowering the...
متن کاملDiet Breakfast-chocolate Production using Fat Substitutes with Maltodextrin and Guar-xanthan and Complete Replacing Milk Powder with Sweet Almond-sesame Meal
Background and Objectives: Breakfast-chocolate is high in fat and calorie; hence, its consumption is limited for people suffering from certain diseases such as obesity and diabetes. Therefore, replacement of fat and milk powder with compounds based on carbohydrate and protein with low digestibility can decrease calories of this product and made it consumable for patients with lactose intoleranc...
متن کاملEffects of milk powders in milk chocolate.
The physical characteristics of milk powders used in chocolate can have significant impact on the processing conditions needed to make that chocolate and the physical and organoleptic properties of the finished product. Four milk powders with different particle characteristics (size, shape, density) and "free" milk fat levels (easily extracted with organic solvent) were evaluated for their effe...
متن کاملImpact of storage on dark chocolate: texture and polymorphic changes.
Chocolate storage is critical to final product quality. Inadequate storage, especially with temperature fluctuations, may lead to rearrangement of triglycerides that make up the bulk of the chocolate matrix; this rearrangement may lead to fat bloom. Bloom is the main cause of quality loss in the chocolate industry. The effect of storage conditions leading to bloom formation on texture and flavo...
